Interview with London, our Catering Director

What types of events do you help plan?

I help with private events, which is a very broad category. I work with people planning birthday parties, weddings, company lunches, fashion presentations - if you're planning event where people might be hungry, I work with you to make sure that doesn't happen.

How do tastings work?

Generally, a client will tell me which day they'd like to come in and what they'd like to taste, or I'll work with our chef to come up with a menu for them based on discussions we've had about their vision for the event. When they come in they meet with me and our chef, Justin, and we spend about an hour or so going over particulars, asking and answering questions, and, of course, eating. It's a good idea to come hungry! I encourage people to book tastings because then we can really get a feel for what you're looking for and you can make little adjustments to this dishes - sub out sauces, make things sweeter, etc.

What are the differences between small bites/drop catering/fueling stations?

Our small bites are appetizers that we can either set up as self-serve or have passed around on a tray. Fueling stations are buffet stations - pasta, sliders, tacos, and the like. Drop catering is us dropping off food that we've prepared in our commissary, no truck service involved.

What's the best part about working at Green Truck?

Our kitchen is literally next door! Being able to eat really good, healthy food whenever I want is a major perk.

Favorite Green Truck Menu item?

I'm a meat eater through and through but I love our vegan burger.
